Betterbatter.org makes a gluten-free flour blend that you can substitute for regular flour, cup for cup. It's the best gluten-free all-purpose flour I've found that truly mimics the taste and texture of wheat flour - even raw, it smells like real flour!
One of my private chef clients is gluten and dairy-free, and I used Better Batter All Purpose Flour to make her son, Rome, pigs-in-a-blanket, using a recipe I found on the betterbatter.org website. (Note: I cut the recipe's amount of sugar in half.) The dough was a classic short crust, and came out light in texture, crunchy, and flavorful.
